Weekend for Two
New Series: 3 Meal of Day🔗
This is a new series for 3 Meals on a weekend. It's in a very similar format as 3 Course prefix. Both consist of a lighter first, a heartier main, and a dessert. Instead of having all three in one meal with a smaller portion as in prefix, we span the three to three meals throughout the day. You may giggle: no breakfast but dessert as a meal. Well, it's the weekend.
To start off, this weekend we have waffles for the day. To keep the convention of lunch sweet and dinner savory, I use black sesame and ginger batter suitable for both. The batter recipe is very casual. I only measure the flour to get target portions (rule of thumb 150g/2 waffles) and add liquid until batter reaches thick pancake consistency.
- 300g flour (with baking soda and powder)
- 2 eggs
- 150g sourdough discard
- milk
- 25g ground black sesame
- grated ginger
Lunch🔗
Top the waffle with juicy sweet peach from farmers market and freshly whipped cream
Dinner🔗
Top the waffle with a runny yolk fried egg, tree oyster mushroom, soy sauce infused cottage cheese, and the best XLB from I-Shanghai Delight! Soy sauce infused cottage cheese doesn't really fit, though itself is pretty tasty. I think for both waffle and XLB, black vinegar is a better fit than soft cheese. Just like maple syrup, we need some runnier drizzle for a savory version.
